Okay so I have absolutely stopped doing some pretty important things that are good for me! Like eating right and exercising, but instead have been on a quest to find food that tastes like comfort! In my defense I did hurt my back when I was cleaning last week, so I’ve really been enjoying having the heating pad on my back while hiding up in our room and feeding my wounds with not-so-good for me food. Although this is well and good to do for a while, I actually have been spending hours a day up in our room. I think its a comfort thing right now, but I really need to start moving more again. and eating better. Oh, did I mention I also have my favorite jellybeans stashed in my night stand….🤭 ssshhhhh
really starting to see the effects
Because I am not eating or moving like I am used to. I am really starting to see the effects. I mean in my mood and energy levels not my hips and thighs. Okay maybe them too :/ Sweat pants are my best friends right now. Just saying.. They are so warm and forgiving….stretchy.😁
There have been so many studies done about eating habits and depression. I know for me, I can see a difference in my mood and energy depending on what I ate the day before. Or started out eating in the morning. I have been lacking all sorts of energy lately. And do find it very comforting to crawl into bed during the day. Needless to say I cannot keep doing this comfort thing and stay mentally and physically healthy. So I am limiting myself to an hour and half in our room during the day for now. (I still need that time to myself) and I can put the heating pad on my back while I am taking my regenerating alone time. Like I mentioned in my blog You Are Not Alone! Even in Isolation. wanting something that tastes like comfort
Still wanting comforting food, but really wanting to eat healthy, I remembered a book that I purchased years ago. This is a book with quick exercises and healthy recipes. The following recipe is quick and healthy and actually tastes like comfort food. I did personalize it with some different ingredients and amounts.
Ingredients
- 3 TBS Avocado Oil. Divided
- 3 TBS Lemon Juice. Divided
- 1 tsp Cumin. Divided
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 4 Large Boneless, Skinless Chicken Breasts
- 1 Medium Onion. Chopped
- 1/2 Cup Water. Add more if needed to keep sauce pourable
- 1/2 tsp Garlic Powder
- 1/3 Cup Almond Butter
Are you ready to start? You’ll love how this recipe is healthy and still tastes like comfort!
Instructions
In a small bowl, combine 2 tablespoons each of lemon juice and avocado oil. Add 1/2 tsp cumin and the salt and pepper. Place the chicken in a glass storage container and brush on the mixture until chicken is completely covered. Let marinate at least 10 minutes. (or you can prepare chicken the night before and have it marinade in refrigerator overnight)
Preheat oven broiler. Place chicken breasts on broiler pan and broil for about 6-7 minutes per side or until cooked through but still juicy.
While the chicken is cooking, heat the remaining tablespoon of avocado oil in a skillet over medium heat. Add the onion and sauté for about 5-6 minutes or until translucent. Add 1/2 cup of water, garlic powder and rest of lemon juice and cumin. Bring mixture to boil and remove from heat. whisk in the almond butter until melted and well blended.
Place the chicken on a plate and pour the Almond sauce over the chicken and serve it with your favorite vegetable and/or salad. Enjoy
Yield: 4 Servings
